Vegan & zero waste banana peel muffins

Did you know you can cook and bake banana peels? I’ve seen this fad everywhere on the gram so I had to try it for myself! I used my vegan banana muffin recipe for the test.

The verdict – yay or nay to peels?

I made 2 batches of banana muffins – one with peels and one without. The verdict is that not much changed (if anything). Neither in taste or consistency.

So why bother doing the extra step of adding bananas? To be honest, I won’t be adding peels to my muffins again because my worms love composting them. But, if you don’t have access to any method of composting, I would definitely recommend using banana peels to reduce your contribution to landfill.

Recipe notes & tips

  • RECIPE WITHOUT PEELS – This recipe can be done with or without peels – just skip the banana peel instructions and proceed just as normal.
  • WHY NOT BLEND BANANA INSTEAD OF MASHING THEM? I chose to blend the peels and mash the bananas separately because the half mashed bananas add a nice thick consistency. However, if you’re in a rush, feel free to blend the bananas in with the peels and the liquids.
  • OPTIONAL EXTRAS – Add nuts, chocolate chips, or frozen or fresh berries (toss them in 1 tablespoon of plain flour first to prevent them from dropping to the bottom of the batter).

Ingredients

  • 2 banana peels (optional)

  • 1/4 cup water

  • 1/4 cup oil

  • 2 bananas (1/2 cup), mashed

  • 1 cup flour

  • 2/3 cup white sugar

  • 1/2 teaspoon bicarb

  • 1 pinch salt

Directions

  • PREHEAT OVEN
    Preheat oven at 200C.
  • CHOP BANANA PEELS
    Wash and dry bananas with peels on. Peel of bananas and set aside. Cut the banana peels in small 1-2 sm pieces.
  • BLEND PEELS & LIQUIDS
    In a food processor, or with a stick blender, mix the banana peels, water, and oil for 1 minute, or until even and smooth.
  • MASH BANANA
    On a chopping board, use fork to mash bananas roughly.
  • MIX DRY INGREDIENTS
    In a medium baking bowl, mix flour, sugar, bicarb, and salt.
  • MIX EVERYTHING
    Add the banana peel mix and the mashed bananas to the dry ingredients and mix until smooth.
  • PREP MUFFINS
    Pour batter into silicone muffin moulds (or greased muffin tray) until 2/3 full.
  • BAKE
    Bake at 200C for 15 min, or until golden on top. Stick a skewer through the muffins to ensure they’re cooked through. If no batter sticks to the skewer, the muffins are ready.
